Today's Tasty Lie is from Christen in her endless quest to defeat every meal that Amy's has to offer. This time out she's chosen a selection from their "Light & Lean" line of food.
We've had many lasagna meals come through this site, both great and horrific. The Smart Ones Lasagna Florentine is still one of my least favorite frozen meals ever. But Amy's meals have a pretty good track record here, so far. So maybe they can get lasagna with spinach right. I really hope they can, because I'd like to have some.

It certainly looks pretty good on the box, but what else would you expect? I love lasagna; it's just layers of pasta and stuff. In this case the stuff seems to mostly be spinach and maybe a little ricotta cheese. I'm glad they stuck with spinach as the main ingredient. All too often I see things I don't really want in my lasagna popping up. Like zucchini. I'm lukewarm on zucchini at best, so keep it out of there. The sauce looks nice and fresh and there's just a dusting of cheese on top. There really doesn't need to be a ton of it on this one. What's it really look like?

Hard to tell, that's the problem with lasagna. You can't get a good gauge on how well layered it is because it's in that weird little box. You could plate it, but that's kind of a mess to do. Especially when you're at work with limited space and time. But what we do see looks pretty good and pretty consistent with the box. It also looks simply delicious. But how did it taste? Only Christen knows for sure.
Amy's Spinach Lasagna is part of the Light & Lean collection of frozen meals. With only 5g of fat and 250 calories, I'd say this is probably the lightest and leanest lasagna dish out there. Organic spinach and pasta combined with tomato sauce and 3 cheeses make this a healthy, tasty meal. I loved it. In fact, I had it again about a week later. Now, if you don't like spinach, you won't like this dish because there is a lot of spinach! I thought it was delicious. The flavor was so fresh and good. The pasta cooked well and there was a good amount of cheese. I thought the sauce was good too. I felt pretty full afterwards, also, which is important! Even though Amy's meals are more expensive than most other frozen meals, I think this one is definitely worth it. I would give it 5 out of 5 stars. No complaints, whatsoever.
